Homemade Tagliatelle
Fresh, homemade pasta is simply something special. With just a few ingredients, a smooth dough is created, from which fine tagliatelle can be formed. Perfect as a side dish to many sauces or simply with a little butter and Parmesan.

Ingredients
200 g all-purpose flour
140 g egg yolks
1 tbsp olive oil
Preparation
Knead the flour, egg yolks, and olive oil into a smooth pasta dough using a stand mixer or by hand. Wrap the finished dough in cling film and let it rest in the refrigerator for about 30 minutes.
Then, roll out the dough very thinly on a floured surface. This is best done with a pasta machine. Cut the rolled-out dough into fine tagliatelle.
Allow the pasta to dry briefly, then cook it al dente in boiling salted water.
Serving Suggestion
Fresh tagliatelle pairs particularly well with classic pasta sauces, ragouts, or simply with a little butter and freshly grated Parmesan.
